Azuluna Veal is produced the old fashioned European way - by nurse cows on pasture. Nurse cows can raise as many as 6 calves per lactation and your labor is minimal. This means lower cost to produce which means higher profits for you. This production method is also the key to Azuluna's appeal in the market. Chefs tell us their customers love it because it tastes great, and because it’s produced locally. Chef Ana Sortun at Oleana Restaurant in Cambridge, MA says, “I've never sold much commercial veal in Cambridge - folks here are concerned about the way it's raised.
