I first learned of Azuluna last spring when I got a call from Ted Kolota asking if I would like to sample locally produced, all natural veal. Ted wanted to drop off a selection of veal cuts that I could sample myself and serve to customers. The only catch was that they wanted my honest opinion as to the quality of the veal, and for me to do an informal customer survey.
